About Richard

Feeding someone who is aging or ill is not just about food. It’s about dignity, routine, and trust.

My relationship with cooking began in 1992 while making a simple bolognese sauce. The moment white wine hit the pan, I knew food would always matter to me — not just as nourishment, but as experience and care. What started as a nightly ritual eventually became my life’s work.

Drive By Gourmet was founded in 2022 after years of professional cooking — and after seeing firsthand how deeply food impacts people navigating illness, memory loss, and aging at home.

From calling to craft

Before becoming a professional cook, I worked in New York in the arts and corporate communications. But in 2012, I chose not to return to office life. Instead, I went to cooking school and trained under a sous chef from Il Buco in Manhattan, completing over 5,000 hours of hands-on experience.

My first large-scale kitchen role was cooking for more than 185 residents at the Veterans Administration in Queens. It was demanding work. Precision, timing, and discipline mattered every minute. That environment taught me how to manage complexity, volume, and consistency — skills I still rely on today. But it wasn’t until I moved to Richmond and began cooking at Cedarfield, a retirement community, that my philosophy truly evolved.

Understanding food and decline

At Cedarfield, I had my own kitchen and cooked daily for 20 full-time residents with memory issues. I created my own menus and saw, up close, how food affected cognition, mood, and overall well-being.

I learned something most families discover the hard way:

Highly nutritional food alone often goes uneaten and pure comfort food gets eaten — but can quietly cause other problems.

The solution isn’t one or the other. It’s balance. Combining familiar, comforting dishes with thoughtful nutrition became the foundation of my approach — food people want to eat, prepared in a way that supports long-term health.

Meals, routine, and human presence

Working in retirement communities also revealed something else: food alone is not a cure-all. Many residents struggled not only with health challenges, but with loneliness.

Those who had more positive human interaction throughout the day often had better eating habits and a higher quality of life.

That insight shaped Drive By Gourmet.

When I personally deliver meals, I’m not just dropping off containers. I’m showing up consistently. I notice changes. I listen. I build rapport. For families caring for someone with dementia, chronic illness, or mobility limitations, that consistency matters.

A small-scale alternative to institutional food

During Covid, I began delivering meals to people who couldn’t leave their homes. Over time, it became clear there were many families in the Richmond area trying to keep loved ones at home — overwhelmed by appointments, care logistics, and the daily question: “What are they going to eat?”

Drive By Gourmet was founded in 2022 to serve those families.

It is intentionally small-scale, personal, and subscription-based — built for ongoing care rather than one-off catering. Families know who is cooking. They know who is delivering. And they know someone is paying attention.

How I approach this work

When it comes to good health, everything matters — the ingredients, the preparation, the cooking, the packaging, and the delivery.

I carefully select oils, seasonings, and ingredients based on quality, nutrition, and value. I adjust recipes if something isn’t working. I believe portion control matters. And I believe food should be both nourishing and satisfying.

As a member of the Greek Orthodox Church, faith shapes how I approach my work. I offer a quiet prayer over each meal — not as a marketing gesture, but as a reminder that every person I cook for matters.

Outside the kitchen, I play piano and enjoy cycling. But most of my energy goes into refining menus, maintaining relationships, and continuing to grow as a cook.

My goal is simple: to help people stay home longer, eat well, and feel cared for.
